These brunch pizzas are easy, delicious, and perfect for feeding a crowd. No dough to cook or sauce to make either! This recipe includes an option for a bacon brunch pizza or a smoked salmon variety, but crumbled sausage, roasted veggies, or anything else you might want draped on a bagel breakfast sandwich would be stellar here.
4 whole wheat naan flatbreads
6 ounces cream cheese, at room temperature
2 cups shredded mozzarella
4 slices bacon, cooked and crumbled OR 4 ounces of smoked salmon
8 large eggs
1 T everything but the bagel seasoning
4 scallions, sliced thin
1/2 C red onion, chopped fine
Arugula and lemon wedges to garnish
Preheat your oven to 375°F.
Lay your naan breads out on two rimmed baking sheets. Spread a tablespoon or two of cream cheese evenly on each piece, leaving a one inch border. Divide the mozzarella evenly among the four pizzas and if using bacon, evenly distribute between the pies.
Using a spoon make two, two inch indentations in the cheese of each pizza*. Carefully crack an egg into each indentation. Sprinkle the everything bagel seasoning evenly over all the pizzas.
Bake for 20 minutes, or until the eggs are just set and the whites have gone from clear to opaque.
Remove from oven and garnish with sliced scallions, red onions, arugula, and lemon wedges. Slice and serve immediately.
*This recipe assumes you’re either making bacon pizzas or smoked salmon ones – but feel free to split the difference and make two of each (it’s a party, right?). If that’s the case, you’ll only need 2 slices of bacon and 2 ounces of smoked salmon.
*The eggs don’t need a ton of room – just push the cheese out of the way to make a little well for the egg to rest in.
*If you’re nervous about shell or broken yolks, then just crack the eggs into a small bowl first, then gently place them, one at a time, onto the pizzas.
