Things that are simple but useful:
Keys – obvi
Sunshine – keeping us alive and all (why this doesn’t edge out “keys” for top billing is interesting)
Oreo cookies – not useful in all circumstances, but every so often can really save the day (also they make them for lefties now too!)
A good pair of scissors – seriously though, why don’t I own more of these?
Simple little things* amirite?
So if you’re into it, here’s something else you can add to the list the small but totally useful things. Quick Pickled Red Onions.
When I say I put these on everything I’m only exaggerating in the slightest, most insignificant way, because I really do put em on all the things that aren’t cereal or ice cream (and even then…). They already make an appearance here and here but I wouldn’t mind them with this, or perhaps these, or piled high on that either! Of course they’re great on tacos (because what isn’t?). But any place you need something bright, zippy, crunchy and a little colorful? THESE! As you can see I’m quite passionate. But something so simple and so spectacularly awesome should be celebrated, no? Oh, did I mention they take about 5 minutes to put together and last essentially forever?!
So stop reading now and go make them. Your life will improve. K, thanks, bye!

Quick Pickled Red Onions
These get better and also prettier with time, but if you’re in a pinch you can get away with the quick and dirty version – just slice them very thinly, make sure to use hot water, and let them soak for as long as you’ve got.

Ingredients
1 large red onion, sliced thin
1 C red wine vinegar
1 C hot water
¼ C granulated sugar
1 tsp kosher salt
Instructions
Combine vinegar, water, sugar and salt in a medium bowl. Stir until sugar and salt are completely dissolved.
Add onion and push down to submerge. Cover and refrigerate for at least an hour, or up to 2 days.
Eat on many things.
Notes
*Feel free to use something besides red wine vinegar, but I think it produces the best color.
