Well that was quite a week huh? I hope you all made it through the storms with everything in tact (including your sanity). We are fortunately sitting far enough north that it wasn’t an issue. But I did get a very long voicemail from my mom detailing which direction to park our car in the garage so it doesn’t get water damaged. Side note: we do not have a garage – it’s the thought that counts though.
With the weather on my mind (and honestly when is it not?) I thought a lot about fall and the things we’ll eat and the cute sweaters we’ll wear and the scented candles we’ll spend too much money on. But then it was 89 degrees out, and the earth very bluntly reminded me that it’s wildly unpredictable and that technically it’s also still summer.
So does that mean that I’ll be shunning pumpkins and cider and cinnamon spice? Well no, I’m not a monster, and actually am about to explode my “fall ness” all over you, so just you wait. But today I’m trying to bridge the gap. So let’s take something comfy and cozy – oatmeal, pair it with something light and bright – lemon, and also make it ridiculously easy because we could all use a little break methinks.
Lemon and honey overnight oats are the thing man! They’re the bridge between short shorts and chunky sweaters! You literally just stir everything up the night before and then you get to wake up to breakfast just waiting for you! I’m very excited about this as you can tell by my excessive use of exclamation points. But it’s worth being excited over!
So whatever season it is currently, get these in your life ASAP. And don’t worry, there’s still plenty of time for pumpkin spice to consume your every waking thought – it’s inevitable.
Lemon Honey Overnight Oats
Lemon and honey overnight oats are a refreshing twist on your usual oatmeal. Spend five minutes putting this together at night and have a healthy breakfast waiting for you in the morning! Also, if you think lemon and oatmeal sounds weird, well I assure you it’s not, but if that’s not enough convincing just think about how weird can be awesome. I’m kind of weird and you took a chance on me, so take a chance on the overnight oats – they will not disappoint.

Ingredients
1 ¾ C nut milk of your choice (don’t use dairy milk – it will curdle)
3 T honey
1 tsp lemon zest
Juice of 1 lemon
½ tsp kosher salt
2 T chia seeds
1 C rolled oats (not the quick cooking kind)
Instructions
In a medium bowl, whisk together nut milk, honey, lemon zest, lemon juice, and salt until honey has dissolved.
Add chia seeds and oats and stir to combine.
Cover and refrigerate overnight.
In the morning, stir to combine and top with fruit, granola, more honey etc.
Notes
A word to the wise though – don’t use dairy milk, as dairy plus citrus is not a good look.
